
Huli Huli Grilled Chicken
Bring tropical flavors to your backyard with this Huli Huli grilled chicken recipe. A pineapple-soy marinade that caramelizes beautifully on the grill.
Huli Huli chicken is a classic Hawaiian dish slow-cooked over charcoal. The sweet marinade caramelizes over the fire, creating an incredible glaze.
Ingredients
- 1 whole chicken, cut into 8 pieces
- ½ cup soy sauce
- ½ cup fresh pineapple juice
- ¼ cup ketchup
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tsp fresh grated ginger
Preparing the Marinade
Combine all marinade ingredients in a bowl. Place the chicken pieces in the marinade for at least two hours (overnight in the fridge is best).
Setting Up the Grill
Set up an indirect heat zone using the Slow 'N Sear® system. Bring the temperature up to 180°C. Place the chicken pieces on the cool side.
Grilling
Grill for 40-45 minutes until the internal temperature reaches 74°C. During the last ten minutes, move the pieces to the hot side and baste with more marinade for a perfect caramelized finish.
