What Is Slow 'N Sear®?
The Slow 'N Sear® is a metal insert for a round kettle grill that pushes coals to one side, creating two-zone cooking: direct heat over coals and indirect on the opposite side. A built-in water reservoir maintains moisture.

Installation
- Place on grill bottom, flush against wall
- Fill coal basket with briquettes
- Add hot water (250-350 ml)
- Light 10-15 briquettes in chimney starter
3 Cooking Modes
Low & Slow — Smoking
107°C. Meat on cool side with wood chunks. For brisket, ribs, pulled pork. 4-12 hours.
Reverse Sear
135°C. Thick steak on cool side to 50-52°C internal, then sear 45-60 seconds per side.
Direct Searing
Maximum heat, up to 370°C. For thin steaks, burgers, vegetables. 2-4 minutes per side.
Temperature Control
Bottom vent controls air, top controls smoke. Smoking: bottom quarter open, top half. Searing: both fully open.

Fits any round grill?
Designed for kettles 47 cm and up. Deluxe for 57 cm.
How much charcoal for 6 hours?
~80 briquettes using Minion Method: unlit in basket + 10-15 lit on top.
Can I skip the water?
Yes, but water is better. For searing you can leave it empty.
Briquettes or lump?
Briquettes for long cooks. Lump for searing. Combine for best results.
Does it replace a smoker?
For home use, absolutely. Up to 12-hour cooks rival dedicated smokers.
